It's delivered by a community of smallholder farmers, most working just a few hectares of land, who bring their ripe cherries to the San Diego mill each harvest. Honey processing actually originated in Costa Rica before spreading worldwide: some of the fruit's mucilage — its natural \"honey\" — is left on the bean during drying, giving the coffee extra sweetness without going fully natural.
