Candelaria is a "community lot" put together by our importer, Genuine Origin, whose quality-control lab in Guatemala City works with producers across Huehuetenango to build a consistent blend each year. Huehuetenango is one of Guatemala's few non-volcanic growing regions — dry, warm days and cool nights slow the ripening of the cherries, which builds sweetness and clarity in the cup. Because farms here sit so high and remote, many producers rely on the region's rivers to run their own small washing mills. This lot carries an SHB (Strictly Hard Bean) designation, meaning it was grown above 1,200 meters, where slower-maturing cherries develop denser, sweeter beans.
