This syrupy-sweet Brazilian coffee comes from the Cerrado region—a sun-drenched savannah where coffee trees develop rich, concentrated sugars. Cherries are picked at peak ripeness, left on the tree until bursting with flavor, then dried naturally to soak in every bit of fruity goodness, followed by careful sorting and patio drying to lock in a full-bodied, dessert-like character.

Salmo is put together by our importer, Genuine Origin, from a group of Cerrado-region producers who sell at farm gate to Genuine Origin's sister company, Volcafe Santos, which processes and preps the lot for export from its facility in Varginha, Minas Gerais. Cerrado itself is a remarkable place to grow coffee — a vast, sun-soaked savannah that's also home to roughly 5% of all species on Earth, with a coffee-growing climate that's only been tapped in the last few decades. Brazil supplies close to a third of the world's coffee, and this lot is a good example of why: reliable, chocolatey, and easy to love.
